Luscious Lemon Bars


Simply Sweet Sunday

The perfect taste combination of sweetness and tangy lemon on a flaky crust.  Lemon bars are a favorite at this house. 

Crust:
1 cup soften butter or margarine
3/4 cup powdered sugar
2 cups flour
dash of salt

In a large mixing bowl cream butter and powdered sugar.  Mix in flour and salt.  Press into greased
9 x 13 inch pan.  Bake at 350 for 20 minutes, till edges are starting to brown. 

Filling:
2 cups sugar
2 tablespoons cornstarch
4 eggs
1/4 cup lemon juice
1/4 teaspoon dried lemon peel (opt) find with spices at store

Place sugar in large mixing bowl, stir in cornstarch.  Beat in eggs, stir in lemon juice and lemon peel.   Pour over slightly cooled crust.  Bake at 350 for 25 minutes.  Remove from oven, sprinkle with 2 tablespoons powdered sugar.  Cool completely before cutting.  Enjoy!
