Leprechaun Cakes

A perfect surpise for St. Patrick's Day breakfast!

1 egg
2/3 cup milk
1/3 cup cup sugar
2 tablespoon vegetable oil
green food coloring
2 cups Bisquik mix
1/8 teaspoon nutmeg
1/4 cup melted butter or margarine
1/3 cup sugar
1 tablespoons green decorating sugar
1/4 teaspoon cinnamon

Preheat oven to 400. Grease muffin pan.   In a small mixing bowl lightly beat egg with a fork, add milk, sugar, oil and green food coloring. Stir in Bisquik and nutmeg just until mixed.   Divide batter evenly into the muffin cups.  (A 3 tablespoon food scoop is perfect for scooping the batter.)  Bake 13 to 15 minutes, until golden.  While the muffins bake, melt butter.  Mix sugars and cinnamon.  Dip the top of the muffins in melted butter and then in the sugar and cinnamon.
Makes 12 muffins.
