Mango Sweet and Spicy Shrimp for Two
All the flavor with no work. This is so simple, cooking for two has never been easier. Of course you can double or triple the recipe.
1 cup of mango salsa (I get mine at Costco)
1 cup crushed pineapple
5 oz frozen cooked shrimp, thawed following package directions
3/4 cup rice
Cook rice. In sauce pan combine salsa and pineapple, simmer covered for 5 minutes. When rice is done add shrimp to salsa and pineapple. When shrimp is warmed through serve over rice. Do not over cook shrimp.
