Banana Cake

If you like banana bread you're going to LOVE this recipe! I don't think I've ever taken this someplace or served it to company when I haven't been asked for the recipe. The combination of banana with cream cheese frosting is to die for!
To start, you'll need some over ripe bananas.  Quick tip; if you're bananas are too ripe but you can't use them soon, freeze them.  The skins will turn dark brown in the freezer but the banana will stay the same.  The banana on the far left came out of my freezer. 

If your bananas came out of the freezer, make sure you thaw them and then mash three bananas or about 1 cup in a small bowl and set aside.
 Next cream;

1 ½ cup sugar
½ cup soften butter

Then mix in;

2 eggs
1 cup sour cream
1 tsp vanilla
2 cups flour
1 tsp baking soda
¼ tsp salt

Slowly add bananas, taking care not to over mix.

 Bake in a 10 X 15 cookie sheet at 350 for about 18 minutes.

While the cake bakes whip up the Cream Cheese Frosting.

Frosting Ingredients:
4 oz cream cheese
1 cube margarine or butter
2 ½ cups powdered sugar
2 tsp vanilla

Directions:
Cream the margarine and cream cheese together.  Add powder sugar and vanilla, beat until smooth.  Frost the cake once it has cooled.

If you love warm banana bread spread the frosting after it's cooled for only a few minutes, it won't look as nice because the frosting will melt but it sure tastes good warm and gooey!
